How to Make Braised Eggs with Soy Sauce: A Simple Guide

Braised eggs in soy sauce (卤肉蛋) are a beloved savory snack, perfect with rice or noodles. Here’s a simple guide to making them at home.

Ingredients: 6-8 eggs, 1 cup soy sauce, ½ cup water, 2 tbsp sugar, 1 star anise, 1 cinnamon stick, 3 slices ginger, 2 cloves garlic, and 1 bay leaf.

Steps:

1. Boil eggs: Place eggs in cold water, bring to a boil, then simmer for 7 minutes. Cool, peel, and score lightly with a fork for better flavor absorption.

2. Prepare braising liquid: In a pot, mix soy sauce, water, sugar, and aromatics (star anise, cinnamon, ginger, garlic, bay leaf). Simmer until sugar dissolves.

3. Braise eggs: Gently place eggs in the liquid, ensuring they are fully submerged. Bring to a simmer, then reduce heat to low. Cover and cook for 20–30 minutes, turning occasionally for even coloring.

4. Rest and store: Turn off the heat and let eggs steep in the liquid for at least 2 hours (or overnight for richer flavor). Store in the fridge for up to a week.
