How to Make Perfect Pan-Fried Beef Potstickers

Beef potstickers, with their crispy bottoms and juicy fillings, are a beloved comfort food. Here’s a simple guide to making them at home.

For the filling, mix 200g ground beef with 2 chopped water chestnuts, 1 minced garlic clove, 1 tbsp soy sauce, 1 tsp sesame oil, and a pinch of white pepper. Stir until well combined—this ensures a flavorful, tender filling.

For the wrappers, you can use store-bought dumpling wrappers for convenience, or make your own by mixing flour and warm water into a smooth dough, then rolling it into thin circles.

Assembly is key: Place a teaspoon of filling in the center of each wrapper. Fold it in half and pinch the edges tightly, creating small pleats to seal (prevents filling from leaking). For extra crispiness, you can wet the edges with water before sealing.

Cooking: Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange potstickers in a single layer, flat-side down. Fry for 2-3 minutes until golden brown. Then, add 4 tbsp water, cover, and steam for 5-7 minutes until cooked through. Uncover, let any remaining water evaporate, and fry for another minute to crisp the bottoms again.

Serve hot with a dipping sauce of soy sauce, rice vinegar, and chili oil. Enjoy these crispy, savory delights fresh from the pan!
