Spiced soybeans, or "zao maodou," are a beloved snack in China, loved for their tender texture and savory flavor. Here’s a simple guide to making them at home.

Ingredients: Fresh soybeans (with pods), 5-6 Sichuan peppercorns, 2 star anise, 1 cinnamon stick, 3-4 garlic cloves, 1 tbsp soy sauce, 1 tsp salt, and water.

Steps:

1. Prepare the soybeans: Rinse fresh soybeans and trim the ends. For a softer texture, gently smash the pods with the back of a knife.

2. Boil the base: In a pot, add soybeans, Sichuan peppercorns, star anise, cinnamon, and garlic. Pour in enough water to cover them. Bring to a boil over medium heat.

3. Simmer and season: Reduce heat to low, cover, and simmer for 20–30 minutes until tender. Add soy sauce and salt, stir well, and cook for another 5 minutes to let the flavors infuse.

4. Rest and serve: Turn off the heat and let the soybeans steep in the liquid for 10 minutes. Serve warm or chilled, still in the pods for easy eating.
