How to Make Savory Sesame Seed Flower Buns (Wuxiang Huajuan)

Savory sesame seed flower buns, or *wuxiang huajuan*, are a beloved Chinese breakfast staple, prized for their fluffy texture and aromatic, five-spiced filling. Here’s a simple guide to making them at home.

Ingredients:

For the dough: 500g all-purpose flour, 7g instant yeast, 10g sugar, 5g salt, 280ml warm milk, 20g oil.

For the filling: 3 tbsp flour, 2 tbsp oil, 1 tsp five-spice powder, 1/2 tsp salt, 1 tbsp sesame seeds, chopped green onions (optional).

Steps:

1. Prepare the dough: Mix flour, yeast, sugar, and salt. Gradually add warm milk and oil, knead into a smooth dough. Let it rise in a warm place for 1–2 hours until doubled.

2. Make the filling: Heat oil, stir in flour, five-spice powder, salt, and sesame seeds until fragrant. Cool completely, then mix with green onions if using.

3. Shape the buns: Punch down the dough, divide into 12 portions. Roll each into a circle, spread filling, fold like a pancake, cut slits, and twist into a flower shape.

4. Proof and steam: Place buns on parchment paper, let rest for 20 minutes. Steam over high heat for 15 minutes, then rest for 5 minutes before serving.

These golden, fragrant buns pair perfectly with soy milk or congee. Enjoy the homemade goodness!
