How to Make Purple Sweet Potato Pastries

Purple sweet potato pastries, with their vibrant color and sweet, nutty flavor, are a delightful treat. Here’s a simple guide to making them at home.

Ingredients:

For the dough: 200g all-purpose flour, 80g cold butter, 60g sugar, 1 egg, and 2-3 tbsp water.

For the filling: 300g steamed purple sweet potato, 50g sugar, and 1 tbsp milk (adjust for consistency).

Steps:

1. Prepare the filling: Mash the steamed purple sweet potato until smooth. Mix in sugar and milk until creamy. Set aside.

2. Make the dough: Sift flour and sugar. Add cold butter (cut into cubes) and rub with fingertips until crumbly. Beat in the egg, then gradually add water to form a soft dough. Knead briefly, wrap in plastic, and chill for 30 minutes.

3. Shape the pastries: Roll the dough into a 1cm thick sheet. Cut into circles (use a cookie cutter). Place a spoonful of filling in the center, fold the dough over, and seal the edges by pinching.

4. Bake: Preheat the oven to 180°C (350°F). Place pastries on a baking sheet lined with parchment paper. Brush with egg wash for a glossy finish. Bake for 20-25 minutes until golden.

Tips: For extra flavor, add a pinch of cinnamon to the filling. Enjoy these pastries warm with a cup of tea!
