Sour cabbage and pork dumplings, a beloved Northern Chinese dish, offer a perfect blend of tangy crunch and savory richness. Here’s a simple guide to crafting them at home.

For the filling, you’ll need 300g ground pork, 200g finely chopped sour cabbage (soaked to reduce saltiness), 2 shredded wood ear mushrooms, 1 chopped green onion, and 1 minced garlic. Mix with 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tsp sugar, and a pinch of pepper. Stir clockwise until the mixture becomes sticky.

For the dough, combine 400g all-purpose flour with 200ml warm water. Knead into a smooth ball, then let it rest for 30 minutes. Roll the dough into a log, cut into small pieces, and flatten each into a round wrapper.

Assembling is simple: Place 1 tablespoon of filling in the center of a wrapper, fold it in half, and pinch the edges to seal. For a classic pleat, create small folds along the curve.

Cooking options include boiling or pan-frying. To boil, bring a large pot of water to a rolling boil, add dumplings, and stir gently to prevent sticking. Cook until they float (about 3-4 minutes), then drain. For pan-fried, heat oil in a non-stick pan, arrange dumplings, and fry until golden on the bottom. Add 2 tbsp water, cover, and steam for 5 minutes until cooked through.

Serve hot with a dipping sauce of black vinegar and soy sauce. These dumplings are best enjoyed fresh, offering a delightful contrast of textures and flavors that warm the heart.
