How to Make Dry-Fried Green Beans: A Comprehensive Guide

Dry-fried green beans (干煸豇豆) is a beloved Sichuan dish celebrated for its crispy texture and savory, spicy flavor. Here’s a step-by-step guide to mastering this classic.

Ingredients: 500g fresh green beans, 50g ground pork (optional), 3-4 dried red chilies, 2 cloves garlic (minced), 1 tbsp ginger (minced), 1 tbsp soy sauce, 1 tsp dark soy sauce, 1 tsp sugar, 1 tbsp cooking wine, and vegetable oil for stir-frying.

Steps:

1. Prep the Beans: Trim the ends of the green beans and snap them into 3-4 inch pieces. Blanch them in boiling water for 2-3 minutes until slightly softened, then drain and pat dry completely—this ensures extra crispiness later.

2. Stir-Fry the Base: Heat 3 tbsp oil in a wok over medium-high heat. Add the green beans and stir-fry for 5-7 minutes until their skin wrinkles and they turn golden-brown. Remove and set aside.

3. Cook the Aromatics: In the same wok, add 1 tbsp oil. Sauté dried chilies, garlic, and ginger until fragrant (about 30 seconds). If using, add ground pork and cook until browned.

4. Combine and Season: Return the green beans to the wok. Pour in soy sauce, dark soy sauce, sugar, and cooking wine. Toss everything vigorously for 1-2 minutes until the beans are evenly coated and caramelized.

Serve hot as a side dish or with steamed rice. For extra crunch, top with roasted Sichuan peppercorn powder. Enjoy this perfect balance of spicy, savory, and crispy goodness!
