First, gather fresh apricots (about 2 pounds), granulated sugar (1 ½ cups), lemon juice (2 tablespoons), and a pinch of salt. Wash the apricots, halve them, and remove the pits. Chop the fruit into small pieces for even cooking.

In a large pot, combine the apricots, sugar, lemon juice, and salt. Let the mixture sit for 30 minutes to allow the sugar to draw out the fruit’s juices. Remove the pot from the heat and skim off any foam. Carefully ladle the hot jam into sterilized jars, leaving ¼ inch of headspace. Seal the jars and process them in a water bath for 10 minutes to ensure long-term storage.
