How to Make Steamed Halu Noodles: A Complete Guide

Steamed Halu Noodles, a beloved Fujianese dish, are celebrated for their savory aroma and chewy texture. Here’s a step-by-step guide to crafting this classic comfort food.

Ingredients: Fresh rice noodles (500g), pork belly (200g, diced), shiitake mushrooms (5, soaked and sliced), dried shrimp (20g), soy sauce, oyster sauce, five-spice powder, sugar, and lard or cooking oil.

Steps:

1. Prep the Noodles: Soak rice noodles in warm water until soft, then drain. Toss with 2 tbsp soy sauce, 1 tbsp oyster sauce, 0.5 tsp five-spice powder, and 1 tsp sugar to marinate (15 mins).

2. Cook the Toppings: Sauté diced pork belly until crispy. Add mushrooms and dried shrimp, stir-frying until fragrant. Season with 1 tbsp soy sauce and a pinch of sugar.

3. Layer and Steam: Grease a heatproof dish with lard. Spread a third of the noodles, then top with half the pork mixture. Repeat layers, ending with noodles. Drizzle 1 tbsp oil over the top.

4. Steam: Cover and steam over high heat for 30–40 minutes until noodles are tender and flavors meld. Let rest for 5 minutes before slicing and serving.

Tip: For a richer taste, use traditional lard and let the noodles steam slowly to absorb all the savory juices. Enjoy this hearty dish warm, paired with a side of pickled vegetables!
