A platter of braised delicacies (卤味拼盘) is a beloved Chinese appetizer, celebrated for its rich, savory flavors and tender textures. Creating one at home is simpler than you think—follow this guide to master the art.

Step 1: Prepare the Master Braising Liquid

The heart of any braised dish is its broth. In a large pot, combine 4 cups of water, 1/2 cup soy sauce, 1/4 cup dark soy sauce (for color), 3 tablespoons Shaoxing wine, 5 star anise, 3 cinnamon sticks, 1 sliced ginger, 4 cloves of garlic, 1 rock sugar, and a pinch of salt and Sichuan peppercorns. Submerge ingredients in the master broth, ensuring they are fully covered. Simmer gently over low heat for 20–40 minutes (depending on thickness—chicken wings take 20 mins, pork belly 40 mins). Turn off heat and let them steep in the broth for at least 2 hours (or overnight for deeper flavor).

Step 4: Assemble and Serve
