Fried maye, a beloved crispy snack in many Chinese households, is golden, fragrant, and slightly sweet. Here’s a simple guide to making it at home.
Ingredients: All-purpose flour (200g), water (120ml), egg (1), sugar (2 tbsp), salt (½ tsp), baking powder (1 tsp), and sesame oil (1 tbsp). For extra flavor, add a pinch of five-spice powder.
Steps:
1. Mix the dough: In a bowl, combine flour, sugar, salt, and baking powder. Beat the egg, mix with water, and pour into the dry ingredients. Stir until a smooth, thick batter forms. Add sesame oil and knead for 5 minutes until elastic. Cover and let rest for 30 minutes.
2. Roll and cut: Dust a surface with flour. Roll the dough into a thin rectangle (about 1mm thick). Cut into 3x5cm rectangles. Use a knife to slit a small slit in the center of each piece, then pull one end through to create a "leaf" shape.
3. Fry until golden: Heat oil to 170°C (340°F). Fry maye in small batches, 1-2 minutes per side, until puffed and golden. Remove and drain on paper towels.
Tips: For crunchier maye, fry at a higher temperature (180°C) for a shorter time. Store in an airtight container to stay crisp. Enjoy with tea or as a savory snack!
