Crispy radish cake pastries, or "Luobo Si Su Bing," are a savory Chinese snack loved for their flaky crust and flavorful filling. Here’s a simple guide to making them at home.
Ingredients:
For the filling: 300g grated white radish, 1 tsp salt, 100g minced pork (optional), 2 chopped mushrooms, 1 chopped scallion, 1 tbsp soy sauce, ½ tsp pepper.
For the dough: 250g all-purpose flour, 120g cold butter, 80ml ice water, 1 egg yolk (for glazing).
Steps:
1. Prepare the filling: Squeeze excess water from grated radish. Stir-fry minced pork until browned, add mushrooms, radish, soy sauce, salt, and pepper. Cook for 5 minutes until dry. Cool completely.
2. Make the dough: Mix flour and cold butter until crumbly. Gradually add ice water, knead into a smooth ball. Chill for 30 minutes.
3. Assemble: Roll dough into a thin sheet. Cut into circles (about 8cm diameter). Place a spoonful of filling in the center, fold edges to seal, pinch into a flat cake.
4. Bake: Brush with egg yolk. Bake at 200°C for 20-25 minutes until golden brown.
Enjoy these warm, crispy pastries as a snack or appetizer! Adjust spices to taste for a personalized touch.
