How to Make Hearty Lamb Offal Soup: A Comprehensive Guide

Lamb offal soup, a beloved comfort food in many cultures, is celebrated for its rich flavor and nutrient-dense ingredients. Mastering this dish involves selecting quality offal, preparing it meticulously, and balancing flavors for a satisfying broth. Here’s a step-by-step guide to crafting the perfect bowl.

Ingredients:

- 500g lamb offal (heart, liver, lungs, intestines), cleaned and chopped

- 1 onion, 2 carrots, 2 celery stalks (roughly chopped)

- 4 garlic cloves, 1 ginger slice (3cm)

- 1 tsp cumin, 1 tsp coriander seeds, 2 bay leaves

- Salt, black pepper, and a pinch of red pepper flakes (to taste)

- Fresh herbs (parsley or cilantro) for garnish

Steps:

1. Clean the Offal: Soak intestines in salt water for 1 hour, scrubbing thoroughly. Rinse heart and liver, removing excess fat. Boil all offal in water for 5 minutes, then drain and dice.

2. Broth Base: In a large pot, sauté onion, carrots, and celery in 2 tbsp oil until soft. Add garlic, ginger, cumin, and coriander seeds; cook for 1 minute until fragrant.

3. Simmer: Return offal to the pot, add 8 cups of water, bay leaves, and salt. Bring to a boil, then reduce heat to low. Simmer for 2–3 hours until tender. Skim foam occasionally.

4. Season and Serve: Remove bay leaves. Adjust seasoning with pepper and red pepper flakes. Ladle into bowls, garnish with fresh herbs, and serve hot with crusty bread or rice.

Tips: For extra depth, add a splash of red wine during simmering or a splash of vinegar at the end to brighten flavors. This hearty soup is best enjoyed fresh, offering warmth and robust taste in every spoonful.
