Jiangmi Tiao, or glutinous rice flour sticks, are a crispy, sweet Chinese snack enjoyed during festivals. Here’s a simple guide to making them at home.
Ingredients: You’ll need glutinous rice flour, all-purpose flour, sugar, water, sesame seeds, and oil for frying.
Steps:
1. Prepare the dough: Mix 200g glutinous rice flour, 50g all-purpose flour, and 60g sugar. Gradually add 120ml warm water while stirring until a smooth, non-sticky dough forms. Knead for 10 minutes, then let it rest for 30 minutes.
2. Shape the dough: Roll the dough into a 1cm-thick sheet, cut it into 5cm-long strips, and gently stretch each strip into a thin, finger-like shape. Sprinkle sesame seeds on top for extra flavor.
3. Fry until golden: Heat oil to 160°C. Deep-fry the strips in small batches, turning occasionally, until they puff up and turn golden brown (about 3-4 minutes). Remove and drain on paper towels.
4. Optional sweetness: For a sweeter version, you can boil the strips in sugar syrup after frying until coated.
Tips: Ensure the oil temperature is right—too high will burn them, too low will make them greasy. Store in an airtight container to maintain crispiness.
