How to Make Clam Noodles: A Comprehensive Guide

Clam noodles, or "花甲粉丝," are a beloved dish celebrated for their savory broth, tender clams, and springy noodles. Mastering this dish is simple with a few key steps.

First, prep the ingredients: Soak 500g clams in salted water for 30 minutes to purge sand. Rinse 1 bundle of vermicelli noodles until soft, and slice 2 cloves of garlic and 1 chili (optional). Heat 2 tablespoons of oil in a wok, stir-fry garlic and chili until fragrant. Add clams, stir-fry briefly, then pour in 1 cup of water or stock. Cover and cook for 3–5 minutes until clams open.

Next, season with 1 teaspoon of soy sauce, a pinch of sugar, and a dash of sesame oil. Add the noodles, tossing to absorb the broth. If the liquid reduces too quickly, splash in a little more water. Once the noodles are tender and the clams are cooked, turn off the heat. Garnish with chopped scallions or cilantro.

For extra depth, use clam juice-soaked water or a splash of rice wine. Serve hot for a comforting, umami-rich meal. This versatile dish can be customized with tofu, vegetables, or spicy bean paste to suit your taste. Enjoy this easy yet flavorful delicacy at home!
