How to Make Jujube Paste: A Comprehensive Guide

Jujube paste, a sweet and nutritious delicacy, is widely used in pastries, porridges, and snacks. Here’s a simple guide to making it at home.

First, select ripe, red jujubes, wash them thoroughly, and remove the pits. For a smoother texture, you can soak the jujubes in warm water for 30 minutes until soft. Then, transfer them to a pot, add just enough water to cover, and simmer over low heat for 20–30 minutes until the jujubes are mushy.

Next, use a blender to puree the cooked jujubes into a smooth paste. For a traditional touch, pass the puree through a sieve to remove any skins or fibers. Return the paste to a clean pot, add sugar (adjust to taste) and a pinch of salt, then cook over medium-low heat, stirring constantly to prevent sticking. Continue until the paste thickens to a desired consistency—this usually takes 15–20 minutes.

Finally, let the paste cool completely before storing it in an airtight container. It can be refrigerated for up to two weeks or frozen for longer preservation. Use it as a filling for mooncakes, spread it on toast, or mix it into yogurt for a healthy treat. Homemade jujube paste is free of preservatives and bursting with natural sweetness!
