First, select ripe, red jujubes, wash them thoroughly, and remove the pits. For a smoother texture, you can soak the jujubes in warm water for 30 minutes until soft. Then, transfer them to a pot, add just enough water to cover, and simmer over low heat for 20–30 minutes until the jujubes are mushy.
Next, use a blender to puree the cooked jujubes into a smooth paste. For a traditional touch, pass the puree through a sieve to remove any skins or fibers.
