First, gather your ingredients: all-purpose flour, eggs, salt, and water (or milk for richer noodles). A typical ratio is 2 cups flour to 1 large egg, plus 2–3 tablespoons of water. Whisk the egg and salt in a bowl, then gradually add the flour, mixing until a shaggy dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic.
