Ingredients & Preparation: Start with 500g fresh chicken gizzards. Clean them thoroughly: slice each gizzard in half, remove the inner yellow sac, and scrub with salt and vinegar to eliminate any gamey smell. Rinse until the water runs clear, then parboil in boiling water with a slice of ginger and a splash of rice wine for 5 minutes. Drain and set aside.

Cooking Process: Heat 2 tablespoons of oil in a wok or deep pot. Sauté 3-4 sliced garlic cloves, a knob of minced ginger, and 1-2 dried chilies (optional) until fragrant.
