Ingredients: 500g shǔnzi (pre-made starch jelly), 2 tbsp cooking oil, 1 garlic (minced), 1 tbsp light soy sauce, 1 tsp dark soy sauce, 1 tsp sugar, 1 tbsp starch water (for thickening), chopped scallions, and chili flakes (optional).
Steps:
1. Prep the Shǔnzi: Cut the shǔnzi into 1cm-thick cubes. Pat dry with a paper towel to ensure a crispy texture when stir-fried.
2. Sear the Cubes: Heat oil in a wok over medium-high heat. Add shǔnzi cubes and stir-fry for 3–4 minutes until golden brown and slightly crispy on all sides. Remove and set aside.
3. Make the Sauce: In the same wok, add minced garlic and stir-fry until fragrant. Pour in light soy sauce, dark soy sauce, sugar, and a little water. Stir well.
4. Combine and Thicken: Return the shǔnzi cubes to the wok. Add starch water and toss quickly to coat evenly. Cook for 1 minute until the sauce thickens.
