- 300g fresh shrimp, peeled and deveined

- 1 egg white

- 2 tbsp cornstarch

- 1 tsp salt

- ½ tsp white pepper

- 1 green onion, finely chopped

- 2 garlic cloves, minced

- Oil for deep-frying

- Optional: 1 tbsp sake for marination

Steps:

1. Prepare the shrimp: Finely chop the shrimp or pulse in a food processor until paste-like. Transfer to a bowl, add egg white, cornstarch, salt, white pepper, green onion, and garlic. Mix well until the paste is sticky and elastic. Chill for 15 minutes to enhance texture.
