How to Make Classic Clear Chicken Soup: A Step-by-Step Guide

Clear chicken soup, a comforting and nourishing dish, is cherished for its simplicity and delicate flavor. Here’s a detailed guide to crafting the perfect pot.

Ingredients: A whole chicken (3-4 lbs), water (enough to cover), ginger (3-4 slices), green onions (2 stalks), salt (to taste), and optional additions like goji berries or Chinese yam for extra depth.

Steps:

1. Prep the Chicken: Rinse the chicken thoroughly. Pat dry and trim excess fat. For a richer broth, you may blanch the chicken: place it in boiling water for 3 minutes, then drain and rinse under cold water to remove impurities.

2. Simmer: Transfer the chicken to a large pot. Add enough cold water to cover (about 12 cups). Add ginger slices and green onions (reserve the green tops for garnish). Bring to a gentle boil over medium heat, then reduce to low heat. Skim off any foam that rises to the surface.

3. Slow Cook: Let the soup simmer uncovered for 1.5–2 hours, or until the chicken is tender and the broth is flavorful. Avoid vigorous boiling to keep the broth clear.

4. Season: Add salt to taste during the last 15 minutes. For a sweeter touch, add goji berries 10 minutes before turning off the heat.

5. Serve: Remove the chicken, shred it, and return some meat to the broth if desired. Garnish with chopped green onions and a drizzle of sesame oil.

Enjoy this wholesome soup as a standalone meal or a base for other dishes. Its warmth and simplicity make it a timeless favorite.
