Braised tofu skin, or *hongshao suji*, is a beloved vegetarian dish known for its savory, umami-rich flavor and tender yet chewy texture. Here’s a simple guide to making it at home.
Ingredients:
- 300g dried tofu skin (rehydrated and cut into thick strips)
- 3 tbsp soy sauce
- 1 tbsp dark soy sauce (for color)
- 1 tbsp sugar (or rock sugar)
- 1 star anise
- 1 cinnamon stick
- 3 slices ginger
- 2 cloves garlic (minced)
- 200ml vegetable broth
- 1 tbsp cooking oil
- Sesame seeds (for garnish)
Steps:
1. Prep the tofu skin: Soak dried tofu skin in warm water for 20 minutes until soft, then drain and cut into 2-inch thick strips.
2. Sauté aromatics: Heat oil in a wok over medium heat. Stir-fry ginger, garlic, and star anise until fragrant.
3. Brown the tofu skin: Add tofu skin strips and cook for 2-3 minutes until lightly golden.
4. Simmer in sauce: Pour in soy sauces, sugar, and vegetable broth. Stir to dissolve sugar.
5. Braise: Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally, until the sauce thickens and coats the tofu skin.
6. Finish: Remove star anise and cinnamon. Garnish with sesame seeds and serve hot with rice or noodles.
This dish is versatile—add mushrooms or bok choy for extra flavor. Enjoy its hearty, meaty taste without the meat!
