Ingredients: Fresh lotus root (500g), dried red chilies (8-10), Sichuan peppercorns (1 tsp), garlic (3 cloves), ginger (1 slice), light soy sauce, dark soy sauce, vinegar, sugar, salt, and cooking oil.

Steps:

1. Prep the Lotus Root: Peel and thinly slice the lotus root. Soak in vinegar water for 10 minutes to prevent browning, then blanch in boiling water for 2 minutes. Drain and rinse under cold water to retain crispiness.

2. Make the Sauce: Heat 2 tbsp oil in a wok. Stir-fry dried chilies and Sichuan peppercorns until fragrant. Add minced garlic and ginger, sauté for 30 seconds.
