How to Make Matcha Dorayaki: A Simple Japanese Confection Guide

Matcha dorayaki, a beloved Japanese snack, combines sweet red bean paste with soft, fluffy pancakes. Here’s a concise guide to making this treat at home.

Ingredients: For the pancakes, you’ll need 100g all-purpose flour, 2 tbsp sugar, 1 tsp baking powder, 2 large eggs, 60ml milk, 2 tbsp honey, and 1 tbsp matcha powder. For the filling, 200g smooth anko (red bean paste) is ideal.

Steps:

1. Mix the batter: Whisk eggs, milk, and honey until smooth. In a separate bowl, sift flour, sugar, baking powder, and matcha. Combine wet and dry ingredients gently—lumps are okay.

2. Cook the pancakes: Heat a non-stick pan over low-medium heat. Pour 2 tbsp batter per pancake, cooking for 2–3 minutes until bubbles form. Flip and cook for another 1–2 minutes. Repeat for all batter.

3. Assemble: Spread 1–2 tbsp anko on one pancake, top with another, and press lightly. Serve immediately or store in an airtight container for up to 2 days.

Tips: For extra flavor, add a pinch of salt to the batter or dust dorayaki with powdered sugar. Adjust matcha to taste—more for a stronger flavor, less for subtlety.

Enjoy this delightful, easy-to-make snack that captures the essence of wagashi!
