How to Make Dragon Well Shrimp: A Complete Guide

Dragon Well shrimp, a celebrated Hangzhou dish, blends tender shrimp with the delicate aroma of Longjing tea, creating a light, savory masterpiece. Here’s a step-by-step guide to crafting this iconic dish.

### Ingredients

- 300g fresh shrimp, peeled and deveined (tails left on for elegance)

- 1 tbsp Shaoxing wine

- 1 tsp salt

- 1 egg white

- 2 tbsp cornstarch

- 1 tbsp vegetable oil

- 1 tsp dried Longjing tea leaves (lightly brewed and drained)

- 2 sliced garlic cloves

- 1 sliced green onion

- Seasoning: 1 tsp salt, ½ tsp sugar, 1 tsp soy sauce

### Instructions

1. Prepare the shrimp: Marinate peeled shrimp in Shaoxing wine and salt for 15 minutes. Add egg white and cornstarch, mix gently, then marinate for another 10 minutes.

2. Brew the tea: Steep dried Longjing tea leaves in hot water (80°C) for 1 minute, then drain and set aside.

3. Stir-fry: Heat oil in a wok over medium-high heat. Stir-fry marinated shrimp until they turn pink and curl (about 2 minutes). Remove and set aside.

4. Sauté aromatics: In the same wok, stir-fry garlic and green onion until fragrant. Add the brewed tea leaves and stir briefly.

5. Combine: Return shrimp to the wok. Add seasoning, toss quickly to coat, and cook for 30 seconds.

### Serving Tip

Serve immediately with steamed rice to savor the shrimp’s tenderness and the tea’s floral, grassy notes. This dish embodies the harmony of land and water, making it a timeless delight.
