Fresh pork dumplings, or *shengrou zhaojiao*, are a beloved Chinese dish with tender fillings and delicate wrappers. Here’s a simple guide to making them at home.

Ingredients: For the filling, you’ll need 300g ground pork (preferably a mix of lean and fat for juiciness), 2 shredded cabbage (squeezed dry), 1 chopped scallion, 1 minced ginger, 1 minced garlic, 1 tbsp soy sauce, 1 tsp sesame oil, ½ tsp salt, and a pinch of white pepper. For the wrappers, use 300g all-purpose flour and 150ml warm water.

Steps:

1. Make the dough: Mix flour and warm water into a smooth dough. Knead for 5 minutes, then let it rest for 30 minutes.

2. Prepare the filling: Combine all filling ingredients in a bowl. Stir clockwise until sticky.
