Crystal cakes, a beloved traditional Chinese snack, are loved for their crisp crust, sweet fillings, and melt-in-your-mouth texture. Here’s a simple guide to making them at home.
Ingredients: For the crust, you’ll need 200g all-purpose flour, 50g sugar, 100g lard (or shortening), and 60ml water. For the filling, mix 150g candied winter melon, 100g peeled walnuts, 50g sesame seeds, 100g sugar, and 1 tbsp osmanthus water.
Steps:
1. Prepare the crust: Rub lard into flour until it resembles breadcrumbs. Add sugar and water, knead into a smooth dough, and rest for 30 minutes.
2. Make the filling: Chop winter melon and walnuts. Toast sesame seeds. Mix all filling ingredients until well combined.
3. Shape the cakes: Divide the dough into small balls (about 30g each). Flatten each ball, wrap in 1 tbsp filling, and seal tightly. Roll into a round cake, about 1cm thick.
4. Bake: Preheat the oven to 180°C. Place cakes on a baking sheet lined with parchment paper. Brush with egg wash and bake for 20–25 minutes until golden.
