Clay pot rice with pork ribs is a comforting, flavorful dish loved for its crispy rice base and tender, savory ribs. Here’s a simple guide to making it at home.

First, prepare the ribs: marinate 500g of pork ribs in a mix of 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sugar, 1 minced garlic clove, and a pinch of black pepper for 30 minutes. For the rice, rinse 1.5 cups of jasmine rice until clear, then soak in water for 20 minutes.

Drizzle the clay pot with 1 tbsp oil, add the drained rice, and pour in 2.5 cups of water (or 1:1.5 rice-to-water ratio). Arrange the marinated ribs on top, along with sliced Chinese sausage and dried shiitake mushrooms. Bring to a boil, then reduce heat to low, cover, and simmer for 15–20 minutes until the rice is tender.
