Radish and pork bone soup is a nourishing and comforting dish, perfect for cold days. Here’s a simple yet flavorful recipe to guide you.

Ingredients: 1 kg pork bones (preferably marrow bones), 1 large white radish (peeled and cut into chunks), 3-4 slices of ginger, 1 scallion (tied into a knot), 6 cups water, salt to taste. Optional: a few dried red dates or goji berries for sweetness.

Steps:

1. Prepare the bones: Blanch pork bones in boiling water for 3-5 minutes to remove impurities. Rinse under cold water and set aside.

2. Simmer the broth: Place bones, ginger, and scallion in a pot. Add water and bring to a boil over high heat, then reduce to low heat. Skim any foam from the surface. Cover and simmer for 1.5–2 hours until the broth is rich.

3. Add radish: Toss in radish chunks and continue simmering for 30–40 minutes, or until the radish turns translucent and tender.

4. Season and serve: Add salt (and optional dates/goji berries) in the last 10 minutes. Discard the scallion and ginger. Serve hot for a warm, satisfying meal.
