Pineapple buns, a beloved Hong Kong pastry, get their name from their cracked, golden-brown topping, which resembles a pineapple’s skin. Despite the name, they contain no pineapple—instead, they’re soft, sweet, and perfect with a slab of butter. Here’s a simple recipe to bake them at home.
Ingredients:
For the dough: 300g bread flour, 30g sugar, 30g butter, 1 egg, 120ml warm milk, 2g salt, 3g yeast.
For the topping: 50g sugar, 50g flour, 1 egg yolk, 30g butter (melted), a pinch of baking powder.
Steps:
1. Make the dough: Dissolve yeast in warm milk. Mix flour, sugar, salt, and egg, then add yeast mixture and knead into a smooth dough. Add butter and knead until elastic. Let it rise for 1 hour until doubled.
2. Prepare the topping: Cream sugar, egg yolk, and melted butter, then fold in flour and baking powder. Pipe or spread onto risen buns.
3. Bake: Preheat oven to 180°C. Bake for 15–20 minutes until golden. Cool slightly before enjoying.
