First, gather fresh cod fillets (about 500g), ginger (sliced), scallions (chopped), soy sauce, cooking oil, and a splash of rice wine. Rinse the cod under cold water and pat dry with paper towels. Lightly score the flesh in a few places to ensure even cooking.
