Shrimp and tofu soup is a comforting, nutritious dish loved for its delicate flavor and silky texture. Here’s a simple yet delicious recipe to try at home.
Ingredients:
- 200g fresh shrimp, peeled and deveined
- 300g soft tofu, cubed
- 1 liter chicken or vegetable broth
- 1 egg, lightly beaten
- 2 green onions, chopped
- 1 tsp soy sauce
- Salt and white pepper to taste
- 1 tsp sesame oil (optional)
- 1 cornstarch mixed with 2 tbsp water (for thickening)
Steps:
1. Prep the ingredients: Rinse the shrimp and pat dry. Cut tofu into small cubes. Finely chop green onions.
2. Cook the broth: In a pot, bring the broth to a gentle boil. Add the shrimp and cook for 2–3 minutes until pink. Remove shrimp and set aside, leaving the broth simmering.
3. Thicken the soup: Gradually pour the cornstarch-water mixture into the broth, stirring constantly until slightly thickened.
4. Add tofu: Gently add the tofu cubes and return the shrimp to the pot. Simmer for 2 minutes to heat through.
5. Season and finish: Drizzle in beaten egg while stirring slowly to create silky strands. Season with soy sauce, salt, and white pepper. Turn off the heat, stir in sesame oil, and garnish with green onions.
Serve hot with steamed rice for a satisfying meal. This versatile soup can be customized with mushrooms or carrots for extra flavor!
