How to Make Red Bean Paste Pumpkin Cakes

Red bean paste pumpkin cakes are a delightful, healthy snack that combines the natural sweetness of pumpkin with the rich flavor of red bean paste. Here’s a simple guide to making them at home.

Ingredients:

- 300g pumpkin, peeled and diced

- 100g glutinous rice flour

- 50g all-purpose flour

- 80g red bean paste (store-bought or homemade)

- 1 tbsp sugar (adjust to taste)

- A pinch of salt

Steps:

1. Prepare the Pumpkin: Steam the diced pumpkin until soft (about 15 minutes). Mash it into a smooth puree. Let it cool slightly.

2. Make the Dough: In a bowl, mix the cooled pumpkin puree, glutinous rice flour, all-purpose flour, sugar, and salt. Knead into a soft dough. If the dough is too sticky, add a little more flour.
