Shitake and bok choy buns are a delicious, healthy snack loved for their savory flavor and soft texture. Here’s a simple guide to making them at home.
Ingredients: For the dough, you’ll need 300g all-purpose flour, 3g yeast, 15g sugar, 2g salt, and 150ml warm water. For the filling, prepare 200g shitake mushrooms (finely chopped), 150g bok choy (sautéed and drained), 1 tbsp soy sauce, 1 tsp sesame oil, a pinch of pepper, and 1 tbsp cornstarch (mixed with water to thicken).
Steps:
1. Make the dough: Mix flour, yeast, sugar, and salt. Gradually add warm water and knead into a smooth dough. Let it rise for 1 hour until doubled in size.
2. Prepare the filling: Sauté shitake mushrooms until tender, mix with chopped bok choy, soy sauce, sesame oil, pepper, and cornstarch. Cool completely.
3. Shape the buns: Punch down the dough and divide into small balls. Roll each into a wrapper, add filling, and pinch edges to seal.
4. Steam: Place buns on parchment-lined steamer trays. Let them rest for 15 minutes, then steam over high heat for 15 minutes. Turn off the heat and wait 5 minutes before opening the lid.
Enjoy these buns warm as a breakfast or side dish! They’re best eaten fresh but can be refrigerated for up to 2 days. Reheat by steaming to retain softness.
