Mackerel dumplings, or *bayu shuijiao*, are a beloved Chinese delicacy known for their tender filling and juicy bite. Here’s a simple guide to crafting these flavorful dumplings at home.

For the filling, you’ll need 500g fresh mackerel, deboned and minced; 200g ground pork for richness; 2 cups shredded cabbage, squeezed dry; 1 chopped green onion; 1 tbsp ginger, minced; 2 cloves garlic, minced; 2 tbsp light soy sauce; 1 tsp sesame oil; 1/2 tsp white pepper; and a pinch of salt. For the wrapper, use 300g all-purpose flour mixed with warm water until a smooth dough forms. Let it rest for 30 minutes.

Steps:

1. Prepare the filling: Mix minced mackerel, pork, cabbage, green onion, ginger, garlic, soy sauce, sesame oil, white pepper, and salt in a bowl. Stir vigorously until the mixture becomes sticky.

2. Make the wrappers: Divide the dough into small balls, then roll each into a thin 8cm circle.

3. Assemble: Place a teaspoon of filling in the center of a wrapper. Fold it in half and pinch the edges to seal, creating pleats for a classic look.

4. Cook: Bring a large pot of water to a boil. Gently drop in the dumplings and cook for 3-5 minutes, until they float. For a crispier texture, pan-fry them after boiling until golden on both sides.

Serve hot with a dipping sauce of soy sauce, vinegar, and chili oil. These dumplings are perfect for family gatherings or a comforting meal!
