Family-Style Zhajiang Noodles: A Step-by-Step Guide

Zhajiang noodles, a beloved Northern Chinese dish, are famous for their savory, umami-rich bean paste sauce. Here’s a simple guide to making this comforting meal at home.

Ingredients:

- 200g noodles (fresh or dried)

- 150g ground pork (or beef)

- 3 tbsp fermented yellow bean sauce (zhajiang)

- 1/2 cup diced tofu (optional, for texture)

- 2 tbsp soybean oil

- 1 tbsp sugar

- 1 cup water or stock

- Garnish: julienned cucumber, shredded carrot, or bean sprouts.

Steps:

1. Cook the noodles: Boil in salted water until al dente. Rinse under cold water and set aside.

2. Prepare the sauce: Heat oil in a wok over medium heat. Sauté ground pork until browned. Add diced tofu (if using) and stir-fry for 2 minutes.
