Two-color tofu is a visually appealing and nutritious dish, combining white and green tofu for a delightful contrast. Here’s a simple guide to making it at home.
Ingredients:
- 1 block (300g) soft tofu (silken or firm)
- 50g spinach (for green tofu)
- 1 egg yolk (optional, for richer color)
- Salt, pepper, sesame oil
- Garnish: chopped scallions, sesame seeds.
Steps:
1. Prepare the Tofu: Cut the tofu into two equal portions. Mash one portion finely with a fork. For the green tofu, blanch spinach, chop it, and blend with the second tofu portion until smooth. Season both mixes with salt, pepper, and a drop of sesame oil. Add egg yolk to the white tofu for a vibrant yellow if desired.
2. Shape the Tofu: Lightly oil a rectangular container. Spread half the white tofu mixture evenly, then layer the green tofu on top. Press gently to remove air bubbles. Refrigerate for 1 hour to set.
3. Serve: Invert the tofu onto a plate, cut into squares, and garnish with scallions and sesame seeds. For extra flavor, drizzle with soy sauce or chili oil.
This dish is versatile—enjoy it as a cold appetizer or a side dish. The creamy texture and fresh flavors make it a hit for any meal!
