Ingredients:

- 1 block (300g) soft tofu (silken or firm)

- 50g spinach (for green tofu)

- 1 egg yolk (optional, for richer color)

- Salt, pepper, sesame oil

- Garnish: chopped scallions, sesame seeds.

Steps:

1. Prepare the Tofu: Cut the tofu into two equal portions. Mash one portion finely with a fork. For the green tofu, blanch spinach, chop it, and blend with the second tofu portion until smooth. Season both mixes with salt, pepper, and a drop of sesame oil. Add egg yolk to the white tofu for a vibrant yellow if desired.
