How to Stir-Fry Water Bamboo with Pork: A Complete Guide

Stir-fried water bamboo with pork is a classic Chinese dish loved for its crisp-tender texture and savory flavor. Here’s a simple yet delicious recipe to recreate it at home.

Ingredients:

- 200g fresh water bamboo, peeled and sliced diagonally into thin strips

- 150g pork loin, thinly sliced and marinated in 1 tbsp soy sauce, 1 tsp starch, and a pinch of pepper for 10 minutes

- 2 cloves garlic, minced

- 1 green onion, chopped

- 1 tbsp cooking oil

- Seasonings: 1 tbsp light soy sauce, ½ tsp dark soy sauce (for color), ½ tsp sugar, a pinch of salt

Steps:

1. Prep the Water Bamboo: Boil the sliced water bamboo in salted water for 2 minutes to remove bitterness. Drain and rinse under cold water. Set aside.

2. Cook the Pork: Heat oil in a wok over medium-high heat. Stir-fry the marinated pork until no longer pink. Remove and set aside.

3. Stir-Fry Aromatics: Add a little more oil if needed. Sauté minced garlic until fragrant, then toss in the blanched water bamboo. Stir-fry for 1–2 minutes.

4. Combine and Season: Return the pork to the wok. Add light soy sauce, dark soy sauce, sugar, and salt. Stir-fry everything together for another minute until well-coated.

5. Garnish and Serve: Turn off the heat, sprinkle with chopped green onions, and give it a final mix. Serve hot with steamed rice.

This dish balances the crunch of water bamboo with the tender, savory pork, making it a quick weeknight meal. Enjoy!
