How to Make Blueberry Mousse Cake: A Step-by-Step Guide

Blueberry mousse cake is a delightful dessert that combines the tangy sweetness of blueberries with the airy richness of mousse. Here’s a simple recipe to create this elegant treat at home.

Ingredients:

For the sponge base: 4 eggs, 60g sugar, 60g flour, 10g melted butter.

For the blueberry mousse: 200g fresh blueberries, 30g sugar, 200ml heavy cream, 2 gelatin sheets.

For the glaze: 100g blueberry puree, 1 gelatin sheet.

Steps:

1. Prepare the sponge base: Whisk eggs and sugar until thick and pale. Gently fold in flour and melted butter. Pour into a 6-inch round cake pan and bake at 180°C for 15 minutes. Let cool.

2. Make the blueberry compote: Simmer blueberries and sugar for 10 minutes until soft. Blend into a puree, then strain to remove seeds. Let cool.

3. Prepare the mousse: Soak gelatin in cold water until soft, then dissolve in warm compote. Whip cream to soft peaks. Fold the compote-gelatin mixture into the cream gently.

4. Assemble the cake: Place the sponge base in a springform pan. Pour half the mousse over, then add another layer of sponge. Top with the remaining mousse. Chill for 4 hours.
