How to Steam Sea Bream: A Simple Culinary Guide

Steaming sea bream is a beloved method to preserve its natural flavors and tenderness, popular in Chinese cuisine. Here’s a step-by-step guide to mastering this dish.

First, select a fresh sea bream (about 500-600g), scaling and gutting it thoroughly. Rinse inside and out with cold water, then score the flesh lightly on both sides to ensure even cooking. Pat dry with paper towels to prevent sogginess.

Next, prepare the aromatics. Slice 2-3 ginger into thin strips, and chop 2-3 scallions, whites and greens separated. Place the ginger slices and scallion whites inside the fish cavity and beneath it to add fragrance and elevate the fish.

For the sauce, heat 3 tablespoons of light soy sauce, 1 tablespoon of cooking wine, and 1 teaspoon of sesame oil in a small pan until warm. Pour half over the fish.

Steam the fish in a preheated wok or steamer over high heat for 8-10 minutes (depending on thickness), or until the flesh turns opaque and flakes easily. Remove, discard the old aromatics, and top with fresh scallion greens and julienned ginger.

Finally, heat 2 tablespoons of neutral oil until smoking, then pour over the scallings and ginger to release their aroma. Drizzle the remaining sauce, and serve immediately with steamed rice.
