Ingredients: 500g beef (chuck or brisket, cubed), 4 ripe tomatoes (blanched and diced), 1 onion (chopped), 2 carrots (sliced), 2 celery stalks (chopped), 3 garlic cloves (minced), 6 cups beef broth, 2 tbsp tomato paste, 1 tsp dried herbs (thyme or oregano), salt, and pepper to taste.

Instructions:

1. Sear the Beef: Heat 2 tbsp oil in a large pot over medium-high heat. Brown the beef cubes on all sides (about 5-7 minutes). Remove and set aside.
