Braised pork ribs, or "Gao Sheng Pai Gu," is a beloved Chinese dish celebrated for its tender meat, rich sauce, and slightly sweet-savory flavor. Here’s a simple guide to making it at home.
Ingredients: 500g pork ribs, 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp sugar, 1 cup water, 2 sliced ginger, 3 crushed garlic cloves, 1 star anise, 1 cinnamon stick, and 1 tbsp cooking oil.
Steps:
1. Prepare the Ribs: Rinse ribs and pat dry. Parboil them in boiling water for 5 minutes to remove impurities, then drain.
2. Sauté Aromatics: Heat oil in a pot over medium heat. Stir-fry ginger, garlic, star anise, and cinnamon until fragrant.
3. Brown the Ribs: Add ribs and cook until lightly browned on all sides.
4. Simmer: Mix soy sauces and sugar, then pour over the ribs. Add water, bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours, until ribs are fall-off-the-bone tender.
5. Reduce Sauce: Uncover and increase heat slightly to thicken the sauce into a glossy glaze. Serve hot with rice or steamed buns.
Tips: For extra flavor, add a splash of rice wine or a piece of rock sugar during simmering. Adjust sugar or soy sauce to suit your taste. Enjoy this hearty, restaurant-quality dish at home!
