How to Make Chili Oil: A Comprehensive Guide

Chili oil, a versatile and aromatic condiment, elevates dishes from noodles to stir-fries with its spicy, fragrant kick. Here’s a detailed guide to crafting the perfect batch.

Ingredients: Dried chili flakes (or whole chilies for heat control), Sichuan peppercorns (for numbing aroma), neutral oil (sesame or vegetable), garlic, ginger, scallions, and a pinch of salt.

Step 1: Prepare the Chilies. Toast dried chilies in a dry pan over low heat until fragrant (1-2 minutes), then crush them coarsely. For extra depth, add Sichuan peppercorns and toast briefly, then grind with a mortar.

Step 2: Infuse the Oil. Heat oil in a wok until it reaches 170–180°C (340–356°F). Cool slightly to 150°C (302°F) to avoid burning the spices.

Step 3: Flavor Build. Fry garlic, ginger, and scallions in the oil until golden, then remove them. Let the oil cool to 100°C (212°F), then add the chili mixture. Stir gently, then let steep for 30 minutes. Strain for a clear oil or keep solids for a rustic texture.

Step 4: Store and Use. Pour into a sterilized jar; it keeps for months. Drizzle over dumplings, mix into marinades, or use as a dipping sauce. Adjust chili-to-oil ratios to customize heat levels.

This simple yet flavorful chili oil will become a kitchen staple, adding warmth and complexity to any dish.
