Mastering the Art of Soy-Braised Beef: A Culinary Guide

Soy-braised beef, a beloved dish with tender meat and a rich, umami-rich sauce, is easier to prepare than you think. Here’s a simple guide to recreating this flavorful classic at home.

Ingredients: 500g beef chuck (cut into 2-inch cubes), 3 tbsp soy sauce, 2 tbsp dark soy sauce, 1 tbsp Shaoxing wine, 1 tbsp sugar, 1 cinnamon stick, 3 star anise, 1 sliced ginger, 3 minced garlic, 2 dried chilies (optional), and enough water to cover.

Steps:

1. Marinate: Toss beef with 1 tbsp soy sauce, Shaoxing wine, and ginger for 20 minutes.

2. Sear: Heat oil in a pot over medium-high heat. Brown beef on all sides, then remove.

3. Braise: Sauté garlic and chilies until fragrant. Return beef, add remaining soy sauce, dark soy sauce, sugar, cinnamon, and star anise. Pour in water to cover.

4. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 1.5–2 hours until beef is fork-tender.

5. Reduce: Uncover, increase heat slightly, and cook for 10–15 minutes to thicken the sauce.
