How to Make Luffa and Tofu Soup: A Simple Guide

Luffa and tofu soup is a light, nutritious, and easy-to-make dish loved for its fresh flavor and health benefits. Here’s a simple guide to preparing it in just a few steps.

Ingredients:

1 fresh luffa (about 300g), 1 block of firm tofu (300g), 2 cloves of garlic (minced), 1 liter of vegetable or chicken broth, 1 tablespoon cooking oil, salt, and pepper to taste. Optional: a pinch of dried shrimp or mushrooms for extra umami.

Instructions:

1. Prep the ingredients: Peel the luffa, cut it into bite-sized pieces, and press the tofu to remove excess water before cubing it.

2. Sauté the aromatics: Heat oil in a pot over medium heat. Add minced garlic and stir-fry until fragrant (about 30 seconds).

3. Simmer the soup: Pour in the broth, bring to a boil, then add the luffa and tofu. Reduce heat and let it simmer for 8–10 minutes, until the luffa is tender.

4. Season and serve: Season with salt, pepper, and optional umami boosters. Garnish with chopped green onions or cilantro before serving hot.

Tips: For a richer broth, use dashi or mushroom-soaking water. Avoid overcooking the tofu to keep it firm. This soup pairs perfectly with steamed rice and makes a comforting meal any day!
