How to Make Hearty Pumpkin and Potato Stew

Pumpkin and potato stew is a comforting, one-pot dish perfect for chilly days. Packed with nutrients and rich flavors, it’s easy to customize with simple ingredients. Here’s a basic recipe to get you started.

Ingredients:

- 2 cups pumpkin, peeled and cubed

- 2 potatoes, peeled and diced

- 1 onion, finely chopped

- 3 cloves garlic, minced

- 4 cups vegetable/chicken broth

- 1 tsp thyme (fresh or dried)

- Salt and pepper to taste

- 2 tbsp olive oil

- Optional: 1/2 cup coconut milk for creaminess, or carrots/celery for extra veggies.

Steps:

1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion and garlic, cook until soft (3-4 mins).

2. Add Veggies: Toss in pumpkin and potato cubes, stirring to coat with oil. Cook for 5 mins to lightly brown.

3. Simmer: Pour in broth and thyme. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 mins, or until veggies are tender.
