How to Make Delicious Shitake Chicken Rice

Shitake chicken rice is a flavorful, one-pot meal perfect for busy weeknights. Here’s a simple guide to making it from scratch.

First, gather your ingredients: 2 cups rice, 500g chicken thighs (cut into bite-sized pieces), 8-10 shitake mushrooms (soaked and sliced), 1 onion (diced), 3 cloves garlic (minced), 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, and salt to taste.

Start by marinating the chicken: mix it with soy sauce, garlic, and a pinch of salt for 15 minutes. Heat 2 tbsp oil in a pot, sauté the onion until soft, then add the chicken and cook until golden. Stir in the mushrooms and cook for 3-4 minutes until tender.

Rinse the rice and add it to the pot, stirring to coat the grains with oil. Pour in 2.5 cups of water (or mushroom soaking liquid for extra flavor), along with oyster sauce and sesame oil. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is cooked and the liquid is absorbed.
