How to Make Three-Fresh Pan-Fried Dumplings (Sanxian Guotie)

Sanxian Guotie, a beloved Chinese snack, features a savory filling of shrimp, pork, and seasonal vegetables, all wrapped in a thin, golden crust. Here’s a simple guide to making them at home.

Ingredients: For the filling, mix 150g ground pork, 100g chopped shrimp, 100g shredded cabbage (or chives), 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp ginger, salt, and pepper to taste. For the wrapper, use store-bought dumpling wrappers or make a dough with 200g all-purpose flour and 100ml warm water.

Steps:

1. Prepare the filling: Combine all filling ingredients in a bowl, mix well, and let it rest for 15 minutes to enhance flavors.

2. Wrap the dumplings: Place a tablespoon of filling in the center of each wrapper. Fold it in half, pinch the edges to seal, and create small pleats for a classic shape.

3. Pan-fry: Heat 2 tbsp oil in a non-stick pan over medium heat. Arrange the dumplings in a single layer, fry for 2-3 minutes until the bottoms turn golden.

4. Steam and finish: Add 50ml water to the pan, cover immediately, and steam for 5-7 minutes until the filling is cooked through. Uncover, let any remaining water evaporate, and fry for another minute to crisp the bottoms.

Serve hot with a dipping sauce of black vinegar and garlic. Enjoy these crispy, juicy dumplings—the perfect blend of textures and flavors!
