First, gather sushi-grade fish (like salmon or tuna), sushi rice, nori (seaweed sheets), soy sauce, wasabi, and pickled ginger. The key to perfect sushi is the rice: rinse it thoroughly, then cook with a 1:1.2 ratio of water to rice. Once cooked, season the rice with a mix of rice vinegar, sugar, and salt, then let it cool to room temperature.

For maki rolls, place a nori sheet on a bamboo mat, spread a thin layer of rice, leaving the top edge bare. Add your fillings (fish, avocado, cucumber) horizontally, then roll tightly using the mat, pressing gently to seal. Slice the roll into 6-8 pieces with a sharp, wet knife.

For nigiri, take a small amount of rice and shape it into an oval. Top with a slice of fish, gently pressing it to adhere. Serve with soy sauce for dipping and wasabi for extra flavor.
