For the filling: Mix 300g ground pork with 2 finely chopped celery stalks (add a pinch of salt to draw out moisture, then squeeze dry). Add 2 minced garlic cloves, 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp white pepper, and 1 chopped green onion. Stir clockwise until the mixture becomes sticky.

For the wrapper: Combine 2 cups all-purpose flour with 3/4 cup warm water. Knead into a smooth dough, let rest for 30 minutes, then roll into thin logs and cut into small rounds.

Assembling: Place 1 tsp filling in the center of each wrapper. Fold in half, pinch the edges to seal, and create pleats for a classic look.

Cooking: Boil dumplings in salted water until they float (about 5 minutes). For a crispier texture, pan-fry them in oil until golden on both sides, then add a splash of water and steam covered for 3 minutes.
